My Bolognese Recipe…

Grrr. 140 chars is not a good way to deliver a recipe.

Okay, so here is my recipe for Spaghetti bolognese.

1. dry fry 1x onion and 2x garlic cloves, until the onion is translucent.

2. add fresh 500g ground mince (I have a mincer that I make my own mince with – it isn’t for everyone, so use bought mince instead)

3. fry mince till it is broken up and browned.

4. add 1/2 tsp basil, 1/2 tsp oregano, pinch of ginger.

5. stir to mix, adding 1L beef stock in batches.

6. stir in one cup tomato juice, 2 cups chopped tomatoes. (add tomato paste if you like, but be sparing)

7. bring to the boil, when boiling, add 1 cup red wine. Boil for 10mins.

8. add chopped (diced) tomatoes (3 large ones).

9. add shredded carrot (optional), bring back to the boil.

10. turn down to low heat and simmer for an hour, stirring occasionally.

11. in the last 15 mins of the simmer, cook your pasta. some people use oil with the water to keep the pasta separated, I use salted water. Use your best judgement for the portion sizes, add pasta to cold salted water, bring to a boil.

12. drain pasta after 5 mins cooking at a boil or when al dente.

13. serve drained pasta on plates or bowls (personal choice)

14. serve sauce onto pasta portions.

15. cover sauce with grated cheese – parmesan or mozzarella according to your taste.

Note. leftover sauce is great for lasagna, or frozen for other pasta meals.
